Lola Turns 4!

I can’t believe the day is here that my baby is turning FOUR! I have so many emotions running through me today and just can’t believe God has put this amazing fur baby in my life. She has been through so many ups and down in my life. Moved across the United States with me to build my business and has been my number one rock. I am so forever grateful to call her my home. <3

Thank you for always getting me outside to exercise and enjoy this beautiful world we live in. (rain, sun and even snow!)

Thank you for loving me so unconditionally and accepting me for who I am. Whatever mood I am in, I can count on you to always be by my side. Whenever I shed even the smallest tear, I can hear you walking through the house trying to find me. 

Thank you for always picking up the crumbs off the floor. Because of you, I have to sweep much less! 

Thank you for loving food just as much as I do. I love sharing my meals with you and trying new foods!

Thank you for always letting me put you in silly outfits and take your photos. I know you are just doing it for the treats. :) 

Thank you for being my best friend and allowing me to experience a bond and love I didn’t even know existed. Happy Birthday Sweet Girl.

These were so much fun to make in the kitchen with Lola. She is obsessed with these cupcakes and I will be making these a lot more this year!  Did I mentioned they were SO easy to make as well?! They are healthy and smell SO yummy.

I gave her one right after I baked them and she sat next to the kitchen counter begging for another one. hehe!

INGREDIENTS:

1 Egg

1 Cup Whole Wheat Flour

1/4 Cup Old Fashion Oats

2 Tsp Baking Soda

1/2 Cup unsweetened applesauce

1/4 Cup peanut butter

1/3 Cup Coconut Oil

1/4 Cup Honey

FROSTING/TOPPINGS

5.3 OzContainer - Plain Greek Yogurt

Smashed up milk bone treats

DIRECTIONS:

Preheat over to 350 degree F. Line a 6 cup muffin tin with paper liners and set aside.

In a large bowl, combine flour, honey, oats, baking soda, applesauce, coconut oil, egg, peanut butter and mix.

Scoop the batter evenly into the muffin tray. Place into oven and bake for 16-20 minutes. Check to see if cooked all the way through with a toothpick and if it comes out clean. Remove from oven and cool completely before frosting.

FROSTING/TOPPINGS

Frost tops of cupcakes with greek yogurt and smash milk bone treats in a plastic bag
